TWD: Linzer Sables


This week's Tuesdays with Dorie offering is the Linzer Sable, a wonderfully delicious cookie made with ground hazelnuts and filled with raspberry jam. I'm sure it's incredibly delicious.



I'm making an educated guess there, because my version turned out to be quite different from Dorie's ~ not because I didn't like her recipe, but because I was missing a few key ingredients (hazelnuts, jam) and decided to improvise.



I ground some walnuts with a couple of tablespoons flour (to keep it from turning into walnut butter) in my food processor and used that, and instead of filling my cookie sandwich with jam, I opted to go the ganache route.



Even there I made a minor variation: instead of the dark chocolate recommended by Dorie, I used semisweet, and I added several drops (to taste) of orange oil (not extract, but flavoring oil, by Oetker). The result was, I have to say, pretty amazing. That is, I was amazed that they came out so good for a cookie that had so many "make-do" substitutions!

To cut them out, I used my tiny little Christmas cutters, which are only about 1 1/2 inches long. This made the perfect size cookie sandwich for munching.

  10. ~Vibi: Thank you! My sister bought me these cookie cutters and I couldn't wait to use them! These cookies are so tender that the plumpness doesn't make them hard to bite into. (But I would have managed anyway.)

    ~Happytummy: They're kind of like an Orange Milano ~ subtle. I want to try it now with other flavors. The oils don't make the chocolate misbehave like extracts might (I fear seizing!), so you can experiment with them.

    ~Danielle: Don't you just love walnuts? They're such a good standby - they always seem to be there when you need them. I buy a huge bag at Sam's Club and stick them in the freezer. Whenever I run out of almonds or pecans, it's walnuts to the rescue! :) But I do want to try these with hazelnuts.

  15. ~Thank you Pinkstripes and Kristen! I love my little cookie cutters - mini cookies are becoming a favorite way for me to sample more cookies without chaining myself to the exercise bike! And I recently started discovering the benefits of using flavoring oils. There are some amazing flavors out there.

My daughter, who coincidentally shares your name, is very talented, especially when it comes to frosting things, but no . . . she didn't assist with these. Well, she didn't assist with production. She did, however, kindly agree to help taste-test them.
